Chicken Enchilada Casserole
- 1 rotisserie chicken, shredded
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can drained corn
- 1 packet taco seasoning
- 1 24oz can enchilada sauce
- 3 cups shredded cheese
- 5 tortillas, 10 inch
- Toppings: black olives, sour cream, shredded lettuce
Sauté onions and bell pepper till soft. Add chicken, corn, and taco seasoning. Cook until well combined and warm. Pour a tiny bit of enchilada sauce into base of 13×9 inch casserole dish. Place each tortilla in pan and fill with chicken mixture and cheese. Then roll up the tortilla. Repeat with rest of tortillas. Top with rest of enchilada sauce, cheese, and sliced olives. Bake at 350° For about 30-40 min!
Crispy Onion BBQ Chicken
- 4 chicken breasts
- 1/2 sliced onion
- 1 1/2 cups BBQ Sauce (homemade or store bought)
- 1 cup crispy fried onions
Spread 1/2 cup of BBQ sauce onto bottom of casserole dish. Sprinkle sliced onions. Place chicken breasts on top of onions. Top with rest of BBQ sauce. Bake at 375° for 40 minutes. Top with crispy fried onions and bake for an additional 5-10 minutes!
